Father’s Day is near, and chef dads share their dream meals for the occasion. Tom Colicchio, founder of Crafted Hospitality, envisions an outdoor Thanksgiving-like scene on Long Island’s North Fork, with his oldest son helping smoke bone-in short ribs, low and slow, while he stays ready to intervene if needed. Cesar Zapata, chef-owner of Phuc Yea in Miami, plans a Florida day outdoors fishing for snapper or grouper with his stepson Eli and cooking the catch on the grill, complemented by a Vietnamese-style salsa verde and simple sides. Roy Yamaguchi, founder of Roy’s Restaurants, wants his kids home and favors shabu shabu or chankonabe, hot-pot meals that bring everyone together. Across these visions, the common thread is togetherness and easygoing, shared meals over a busy year, rather than perfection in the kitchen.
