Soft-shell crab season arrives in Philadelphia with restaurants showcasing the delicacy in sandwiches, salads, tacos and upscale dishes, even as volumes are compressed this year. Warmer waters sped up the molt, shortening the run and reducing supply versus last year, with volume down about 20%. Jumbo soft-shells traded around $98 a dozen in May, down from about $117 a dozen a year earlier, according to Samuels Seafood. Many restaurants pay between $95 and $100 a dozen for jumbo crabs, a factor that helps explain menu prices often topping $28 for a lunch crab or rising to $45‑$48 for two at dinner. Some venues feature crabs rellenos or tacos to diversify offerings.
With a late Carolina run expected in August or September, suppliers anticipate lower prices later, but availability may remain tight. Philadelphia eateries continue to feature soft-shells when possible, balancing premium pricing with seasonal demand. Diners can expect a range of preparations, from fried or beer-battered preparations to specialty pairings, with the season’s premium status reflected in menu selections and occasional limited availability.
