From Farm to Fork: AI, Biosensors and Green Chemistry Join Forces to Hunt
xCruzo Brief
A new review in Food Chemistry says the livestock and aquaculture world uses about 110,000 tonnes of antimicrobials each year—helping keep animals healthy, but leaving a persistent risk of residues on meat, milk, eggs, honey and fishery products. Led by Marzieh Ramezani Farani and Yun Suk Huh with researchers from Iran, the UK, Cambodia and South Korea, the paper argues the needed tools already exist, but must be connected into an intelligent, sustainable farm-to-fork surveillance pipeline. It examines drug pharmacology, maximum residue limits, lab detection, AI signal interpretation, blockchain traceability and green chemistry. It also stresses withdrawal-period models must be distinguished from analytical verification.
